For those living in S.Ont (I can’t speak for elsewhere), January means pig slaughter. Whole legs and shoulders are showing up fresh for $0.99/lb Cdn, as cheap as I can recall in recent years. A little pickling salt, some Prague powder, a few spices, brown sugar/honey and water, and you have your brine to cure your hams. And the weather at 0C is perfect, the brine won’t freeze until well below -8C depending on the salt content. Or bake them whole. A 20lb leg of pork for $20 is a steal.
